I am firm believer that every holiday needs a themed pastry item, well Easter isn't any different. Last spring right after Easter I saw the cutest cupcakes. I decided then that we were having them this Easter. Well unfortunately I was not able to locate the recipe for the cupcakes I saw. So today I recreated them from memory. I call them Birds In A Nest. For these cupcakes you will need your favorite cake batter (I favor chocolate), buttercream icing, food coloring, coconut flakes, and marshmallow Peep birds.
First you will prepare your cupcake batter and pour the batter into each cup. I have found that 1/4 cup fills a cupcake mold perfectly. Bake the cupcakes as directed and allow to cool.
While your cupcakes are cooling, color your buttercream icing to green. You also need to dye your coconut now too. I found the best way is to put the amount of coconut you need into a gladware container drop food coloring on top and shake! The amount of food coloring you will use depends on what shade you are trying to achieve. After you have colored the icing and coconut and the cupcakes are cool it's time to frost! Top the cupcakes with a generous amount of green icing, then pat on the coconut. After the coconut is on apply a small dot of icing to the top center of the cupcake, this helps the Peep stay on. Grab a Peep and sit him on his nest. You then have an adorable Easter treat that the kiddos (and the adults) will love!

Hello!!
Hi everyone who decided to stop by and read! My friend suggested a few months ago that I start a cooking blog since baking and cooking (yes in that order) is my passion. So I decided to do it!
